  • 1kg / 2.2lb potatoes, peeled and quartered
  • 250g / 0.55lb cabbage or kale, finely chopped
  • 250ml / 8.5fl oz whole milk
  • 100g / 3.5oz butter (plus extra for serving)
  • 4 green onions, chopped
  • 1 tsp salt
  • Black pepper, to taste

Instructions

  1. Boil the potatoes – Place the potatoes in a pot of salted water and cook until fork-tender (about 15-20 minutes). Drain and set aside.
  2. Prepare the greens – While the potatoes cook, melt half the butter in a pan and sauté the cabbage (or kale) until softened. Add the green onions and cook for another minute.
  3. Mash it all together – Mash the drained potatoes with the milk and remaining butter, then stir in the cooked greens. Season with salt and black pepper to taste.
