As we searched for the perfect treat, we found these buttery shortbread cookies and decided to add our own personal touch. We cut a small heart into the top layer and sandwiched the cookies together with raspberry jam—just like how our two hearts are forever joined.

Ingredients
300 Grams (10.5 oz) Plain flour, and a little extra for dusting
200 Grams (7 oz) Unsalted butter
120 Grams (4 oz) Sugar
2 Egg yolks
2 Teaspoons Vanilla sugar (or few drops vanilla extract) (Optional)

Instructions
Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
In a mixing bowl, beat the butter and sugar together until the texture becomes light and creamy. This step ensures your cookies will have a rich, buttery taste.
Gradually add the vanilla extract and flour, mixing continuously until a soft dough forms. If the dough seems too crumbly, gently knead it by hand until smooth.
Lightly flour your work surface, then roll out the dough to about 1 cm (½ inch) thickness.
Use a circle and heart cutter to stamp out circles and then hearts. Cut hearts in every second circle, this will be the top of the cookies. Gather the remaining dough, re-roll it, and continue cutting until all is used.
Bake for approximately 10-12 minutes, or until the edges turn a light golden color. Keep an eye on them to prevent overbaking.
Let the cookies cool on the tray for a few minutes, then transfer them to a wire rack to cool completely.
After the cookies are cooled, spread the circle cookies with no heart with raspberry jam. Place on the jam the heart cut circle.
For an extra festive touch, dust them with powdered sugar, drizzle with chocolate, or decorate with icing as desired.
